Radish Dippers

1 1/2 pints cut long white radishes
1/2 cup cooked and cooled rice
2 tablespoons salt
Small clay or ceramic pot
2 banana leaves (optional)
Scrape radishes clean and cut in finger-length pieces. Sun dry till limp but not dry. Rice should be slightly hard when squeezed between thumb and forefinger, and cooled.
Mix radish, 1 tablespoon of salt, and rice well.
Put into pot, cover with banana leaf or plate and weigh down.
Dissolve 1 tablespoon salt in boiled water, just enough to pour over radish in pot and cover. Keep about 5 days to sour. Wash off rice, drain, and serve.
This method is used for a variety of vegetables.
