Pressed Fish Relish

3, 5-inch pressed catfish
1/4 teaspoon turmeric
2 onions
8 garlic cloves
1 teaspoon tamarind paste
3/4 cup oil
1 teaspoon chili powder
Wash fish, rubbing well till clean. Chop in 3/4-inch pieces; rub with turmeric.
Slice onions and garlic; make thick tamarind liquid from paste with 1/2 cup water.
Heat oil, fry onions and garlic one after another, till light gold, draining off each. Fry chilies till dark-red and drain off.
Pour off 1/2 the oil and set aside. Add fish to remaining oil, strain thick tamarind juice from paste, cover, and cook till water is nearly absorbed.
Prepare serving dish with fish in center, chilies on sides, and fried onions and garlic on top. Pour all oil (that from frying pan as well as what was set aside in Step 4) evenly over all.
