Cucumber Salad I

Ingredients
2 cucumbers
3/4 teaspoon sugar
1 1/2 tablespoons fruit vinegar
2 tablespoons roasted sesame seeds
3 finely chopped green chilies
1 1/2 teaspoons garlic, pounded very finely
2 tablespoons finely chopped celery stalks
Salt to taste
Methods
To make cucumber strips: peel cucumbers. Cut whole rounds which are 1 1/2 inches long. Take a sharp knife and peel a strip 1/8-inch thick from one round, taking care not to break it as you go around.
Continue peeling till you reach the pulpy center. Discard this center. You should have one long strip 2 1/2 inches wide by 1/8 inch thick. Roll strip and cut off 1/8-inch strips to get noodle-shaped strips. Continue with other rounds.
Mix cucumber, sugar, and vinegar, and leave in bowl.
Just before serving, mix with sesame seeds lightly crushed, green chilies, finely pounded garlic, chopped celery stalks, and salt to taste. Mix well.
