Middle Country's Pork Packets

2 1/2 pounds pork, fat and lean
15, 8-inch square banana leaves OR substitute tin foil
1 cup onions, chopped finely
3 teaspoons dried garlic chips
1 teaspoon salt
1/3 teaspoon turmeric
1 cup rice or wheat flour
1 cup chopped chives
1 cup stock or water
4 tablespoons oil
1 tablespoon soy sauce
15, 1- to 2-inch long bamboo skewers


3 teaspoons dried garlic chips
2 tablespoons oil
1/2 teaspoon ginger powder
1/2 teaspoon chili powder
3 tablespoons vinegar
Large pinch sugar
Salt to taste
Chop pork finely. Steam banana leaves gently to make supple.
Soak garlic chips in 2 teaspoons water and mash. Mix garlic and finely chopped onion with pork, salt, turmeric, flour, chopped chives, stock, oil, and soy sauce. Mix well.
Cut a small piece of banana leaf and place in center of 8-inch square. Put 1 heaping tablespoon of mixture on it. Fold by joining opposite corners and pin with skewers though all layers. Trim neatly.
Steam packets about 25 minutes.
To make accompaniment: Fry 2 teaspoons garlic chips in 2 table -spoons heated oil, taking care not to burn. A small amount of this is spooned over unwrapped pork.
Mix rest of garlic, ginger, chili, vinegar, sugar, and salt to form sauce to dip pork into as desired.
Serve packets with accompaniment and clear soup (Soup Item 48) or tea.
