Chop the onion (about 0.5 cm thick) and mix with cooking salt thoroughly in a bowl and leave it for about 10 to 15 minutes. Heat the cooking oil in a pan and fry the onion with medium heat. Do not forget to squeeze all the juice out from the onion before putting into the pan. Reduce the heat leve before onion are completely cook. Put the Turmeric (Yellow) powder at the end and turn the heat off.
Mixing the onion with salt will extract most of the liquid from the onion and give you a crispy finished.Adding Turmeric powder at early stage will burn the powder and turn the oil into black colour.

Dice the belly pork into suitable size.(Some people like it big pieces for Ah Hlu Chat). Add the Paprica/Chilli Powder, Finely Chopped Onion, Chopped Tomatoes, Garlic, Ginger in mince or powder form, Salt, Soy Sauce, Fish Sauce and mix those in the pot thoroughly by hand. Cook those mixture with lid on in medium heat. Frequently, you have to stair it really well and add a little bit of water as necessary to prevent from burning.(Add the water just about to cover the meat.) Cover and cook till tender. A lot of clear oil from pork will be separating out on top.You can still add some oil as required, just before turn off the heat.
This style is called (Lone Chat) in Myanmar and it will cook a lot faster than other method.
Optional Sour Bamboo Shoot and Pork Curry.
Add sour bamboo shoot into the curry and cook for another 10 to 15 minutes. Or Drum Stick and Pork Curry
Grill the Drum Stick (Dunt Da Lon Thee) until cooked. Open and scrape the meat off with spoon from the stick and add those into the curry.
